This is one of my favorite meals to make. It's delicious, vegetarian friendly (with vegetarian stock), and filling. It's also super pretty because of all the different colors in it.

- I am currently a student at the University of Puget Sound. Food and cooking have always been a passion of mine, from the time I was 3 and learning how to make pancakes to hosting dinner parties as part of my senior project. I love to eat almost as much as I love to cook, and I take comfort in the fact that when everything seems like it is falling apart, sometimes all it takes is your favorite food to make it better.
